I use "mother's best" fish sauce. It is Phillipino. I use it because it only has 280mg of salt per tablespoon. That is enough for us. Compared to the other brands in our county's only oriental market, that was why I chose what I did.
I am always suspicious of fish sauce, even though people keep telling me it does not taste like fish. I dunno. I just keep thinking of that famous, and now sadly gone, sign from the Imperial Hotel in Tokyo: 'Please take advantage of our chambermaids.'
