Shrimp, Chicken and Andouille Gumbo |
No, not sitting in a corner weeping over my El Bulli rejection... just been a busy couple of weeks. Should be back at it shortly.
In the meantime, making a little gumbo for Mardi Gras. It's kind of a moral imperative, isn't it?
That or red beans and rice.

Looks beautiful as do all of your dishes. Is it possible to make gumbo without shrimp or other shellfish or does that simply make it a different dish?
Off-topic -- For anyone who was hoping for a Top Chef fix from the Bocuse d'Or USA, Kevin deferred competing this year reportedly because his other Top Chef obligations made him too busy to train.

Gumbo can be anything you want it to be.
Dom's shrimp and sausage.
Chicken gumbo may have sausage, may have tasso (ham), may have both.
Shrimp and crab.
Shrimp and crab and sausage.
Shrimp and crab and sausage and tasso.
Chicken and crab and sausage and crawfish.
Like the shrimp dishes in Forrest Gump, the combinations are endless. What is not is the roux based broth, the okra, and the red pepper.
