Happy Casimir Pulaski Day!

Beet Borscht | Dominic Armato |
Can't think of a better reason to make pierogi and beet borscht!
The holiday, for all of you non-Chicagoans. And a killer beet borscht recipe (not mine) that I will, henceforth, need no excuse to make.
That picture is so beautiful. I think I want it tattooed on my body.

Seems like the proper soundtrack for your meal might by Sufjan Stevens Illinoise. :)

I totally forgot when Pulaski Day was. I've been out of Illinois too long.

Husband took the kids to Milkwaukee Ave for polish breakfast yesterday. I had to go to work. Your meal looks much better though.

I'm always confused when people talk about Pulaski Day, mostly because I live so close to the Pulaski Skyway. That thing isn't worth celebrating.

@Bart, that's the truth. When I was in college, I dated a Chigaoan. One day she kept talking about Pulaski Day and I just stared at her blankly. Up there with Patriot's Day in goofy regional holidays department.

Seeing Pulaski Day brings back fond memories of childhood. One of my cousins lived outside of Chicago, and I always wanted to go Chicago to visit him. I don't think you could grow up in, around, or going to, Chicago without knowing about celebrations like Polaski Day as well as the Polish Constitution Day and Bud Billiken Parades.
